Golden cauliflower and zingy coconut raita make the perfect plant-based combo to fill our Low Carb Everything Wraps.


1 cauliflower
1 Tbsp curry powder
3 carrots, grated
1 cup fresh mint, roughly chopped
1 lime
½ cup vegan coconut yoghurt

To Wrap:
4 Rebel Bakehouse Low Carb Everything Wraps

½ cucumber, chopped in batons
½ fresh red chilli, sliced

Chop your cauliflower into pieces and place on a lined baking tray. Sprinkle over the curry powder, season generously with salt & pepper, drizzle with olive oil and toss to coat. Place in the oven at 200°C fan bake for 20-25 minutes, or until the cauliflower is cooked through and golden.

In a medium mixing bowl add the carrot, ½ cup of chopped mint, the juice of half a lime and season with salt and pepper. Toss to combine.

In a small mixing bowl combine the coconut yoghurt, the remaining mint, the remaining lime juice and stir (to make the raita).

To assemble, spread a generous spoonful of the coconut raita over the middle of the wrap, top with a large handful of the carrot salad, a few cucumber batons and plenty of roast cauliflower pieces. Sprinkle with slices of fresh red chilies and wrap up nice and firmly. Repeat with the remaining 3 wraps.
