Pack our Gluten Free White Wraps chock-full of spiced, grilled chipotle chicken, rice and salsa for a punchy and filling lunch or dinner.

INGREDIENTS

For the Chicken Marinade:
2 chicken breasts, cut in half horizontally
1 tsp cumin
1 tsp paprika
1 tsp dried oregano
2 cloves garlic, crushed
1 Tbsp chipotle sauce

For the Fresh Tomato Salsa:
2 large tomatoes, finely chopped
½ white onion, finely diced
Handful coriander, finely chopped
Juice of half a lime

To Wrap:
4 Rebel Bakehouse Gluten Free White Wraps
1 corn cob
1 ½ cups cooked white rice
2 cups shredded cos or iceberg lettuce
Chipotle mayo, to drizzle

METHOD

Add the cumin, paprika, oregano, garlic and chipotle sauce to a bowl, add a splash of oil and season generously with salt & pepper. Mix to combine. Add the chicken and toss to coat. For a quick meal you can grill your chicken immediately or for an extra punchy flavour, leave it to marinate for at least 3 hours or even overnight. 

Heat a griddle pan over high heat. Cook the chicken for about 3-4 minutes on each side until golden, lightly charred and cooked through. Set aside to rest for a few minutes before slicing across the grain. In the same pan, grill the corn cob until charred and cooked through. When cool enough to handle, use a sharp knife to slice the kernels off in chunks. 

Add the salsa ingredients to a bowl and toss gently to combine. 

Warm your wraps by quickly grilling them in your griddle pan. To assemble, lay your grilled wraps out on a flat surface and layer with rice, lettuce, chicken, tomato salsa, corn and chipotle mayo. Fold up the bottom of each wrap, then fold the sides in and roll up firmly. Yum!

Tip: Make it a wrap bowl! Simply spray or brush your wraps lightly with oil, then place each wrap in an oven-proof bowl before baking in the oven at 180°C for about 7 minutes, until crisp and golden. Remove the wraps from the bowls and carefully transfer to a wire rack to cool before packing with the chipotle chicken ingredients. 

Tip: Always check any store-bought sauces to ensure they are gluten free!
