Try this version of prawn toast for your next brunch! Quick, easy and slightly addictive…


2 Rebel Bakehouse Herb & Black Garlic bagels
2 cup prawns, defrosted
1 tsp garlic, grated
1 tsp ginger, grated
½ tsp honey
1 tsp soy sauce
1 egg white
2 spring onions with green and white parts separated, finely chopped
1 tbsp sesame oil
White and black sesame seeds, to garnish

Finely dice most of the prawns, leaving a few whole.

Put the chopped prawns, ginger, garlic, honey, soy sauce, spring onion whites and egg white in a bowl and mix together.

Brush the inside of the bagels with sesame oil and place in the oven under the grill for a few minutes until lightly toasted. Divide the prawn mixture over the four toasted bagel halves, spreading it into an even layer. Press the whole prawns into the top of the prawn mixture and sprinkle with sesame seeds.

Place it in the oven at 180°C for 10 minutes before turning the oven to grill and grilling the prawn bagels on high for 2 minutes until golden.

Drizzle with chilli oil and sprinkle with spring onion greens and extra sesame seeds!
