INGREDIENTS

4 Rebel Bakehouse Three Cheese Bagels

600g good quality beef mince
8 slices cheddar cheese
1 cup shredded iceberg lettuce
8 rashers streaky bacon
1 small red onion, sliced in rings
½ cup sliced pickles
4 tbsp tomato sauce

For the burger sauce:
¼ cup mayonnaise
1 tbsp tomato sauce
1 tsp American mustard
1 tsp green gherkin relish or finely diced gherkins
1 clove garlic, crushed
Salt & pepper

Makes 4 servings
Take 30 minutes to make

METHOD

Place the beef mince in a bowl and season generously with salt and cracked black pepper. Mix thoroughly and then form into 4 even beef patties, about the same width as the bagels.

Heat a large fry pan or BBQ over high heat. Add a splash of oil and cook the patties for about 8 minutes total, flipping halfway through. When the patties have nearly finished cooking, place two cheese slices on top of each patty so they begin to melt.

Cook the bacon in the frypan over medium heat for 5 – 6 minutes until crisp and cooked to your liking.

To make the special sauce, combine the mayonnaise, tomato sauce, mustard, relish and garlic in a small bowl. Taste and adjust seasoning with salt & pepper. Set aside.

Lightly toast the bagels for a couple minutes until just beginning to turn golden but still soft.

To assemble the bagel burgers spread a heaped spoonful of burger sauce on the bottom of each bagel. Top with a handful of shredded lettuce, the burger patty, 2 strips of crispy bacon, pickles and red onion. Spread a spoonful of tomato sauce over the top bagel and sandwich on top. Repeat with remaining burgers.
